Ever since I made crispy salt and pepper french toast I’ve been on a savory French toast kick. There’s just something that makes so much sense about bread and eggs being savory. I always have a hard time deciding between sweet and savory breakfasts, but these days I’m definitely leaning towards savory.
Did you guys grow up eating French toast? It wasn’t something that my mom usually made at home, but when we went out for breakfast, French toast would be my number one choice – especially how they do French toast in HK cafes: deep fried, topped with butter and doused with syrup. This spicy French toast is nothing like the super sweet French toast of my childhood. This French toast is sophisticated! If you’re looking for something with a bit more flavor, this might be the breakfast for you. It has crisp edges, slightly spicy eggy insides and it’s topped off with a quick cherry tomato sauce. It’s fast, fresh and delicious!
Spicy Savory French Toast with Pan Roasted Cherry Tomatoes
serves 1-2Pan Roasted Basil Cherry Tomatoes
- 1 tablespoon oil
- 1/2 pint cherry tomatoes
- salt and pepper
- 1 tablespoon chopped basil
Spicy Savory French Toast
- 1 egg
- 2 teaspoons Tabasco
- 1 tablespoon chopped basil
- sprinkle of salt
- 1/4 teaspoon ground pepper
- 4 mini brioche buns cut into slices
Roast the tomatoes: Heat a bit of oil in a skillet over medium-high heat. Add the cherry tomatoes and season with salt and pepper. Cook, shaking pan frequently until the tomatoes start to soften and skins start to burst, 2-3 minutes. Remove from the heat and toss with basil.
In a shallow bowl, beat together the egg, tabasco, basil and pepper. Dip slices of bread into egg mix allowing the bread to soak up the eggy goodness. Melt a touch of oil in a large skillet over medium-high heat. Add the soaked slices of bread and fry, flipping once, 2-3 minutes per side or until deeply golden brown and crispy. Enjoy warm with the roasted tomatoes, fresh basil and more tabasco if needed.

what a great french toast idea! i just created a dessert brioche french toast recipe and didn’t even think about a savoury brioche version! will definitely be trying this out.
