I got to be honest with you guys, I’ve never been to Red Lobster – they don’t have Red Lobster in here. But, I have seen a lot of Red Lobster commercials watching TV while in the states. Commercials that make those cheddar bay biscuits look irresistible. Plus, I know people who actually head across the boarder to eat at Red Lobster specifically for the biscuits. One of my friends even brought back some of the biscuit mix for us to make together.
I still haven’t opened that package and since I don’t really foresee a visit to Red Lobster in the near future, I figured I’d make some cheddar bay biscuits from scratch at home.
These guys came together incredibly quickly – I love drop biscuits because there’s no cutting in butter or worrying if your biscuits or going to be flaky or not. Out of the oven, they were irresistible. Cheesy, a bit garlic-y, with crispy brown bottoms and tops. The insides were tender and fluffy. It kinda almost makes me want to go to Red Lobster so I can compare. Should I?!
I’m kind of iffy about the whole Red Lobster thing. Where the heck do they get so many lobsters? How do they stay fresh? How is it that they can have shrimp fest all the time? Whenever Mike and I go to Palm Springs for the summer, I think to myself, Red Lobster, we should go there. But then Mike, as the voice of reason says, “really, lobster in the desert?” He does have a point…

Homemade Red Lobster Cheddar Bay Biscuit Recipe
makes 5 biscuits
Biscuit:
- 1 cup flour
- 1/2 tablespoon sugar
- 1/2 tablespoon baking powder
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- pinch cayenne, optional
- 3/4 cups shredded cheddar
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
Garlic Butter Topping
- 1 1/2 tablespoons melted butter
- 1/2 tablespoon chopped fresh flat leaf parsley
- 1/4 teaspoon garlic powder

Preheat the oven to 450°F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, garlic powder, salt, cayenne (if using), and cheddar. In a liquid measuring cup, whisk together the buttermilk and melted butter.
Pour the buttermilk mixture onto the dry ingredients and use a rubber spatula to lightly mix. You don’t want to over mix, just fold until everything is incorporated.
Use a 1/4 cup cookie (or you could just use spoons) scoop to scoop out biscuits on to the prepared baking sheet.
Bake for 12-15 minutes, or until golden brown.
While the biscuits are baking, whisk together the melted butter, parsley, and garlic powder. When the biscuits are done, brush with the garlic butter mix and enjoy immediately!
