Is it just me, or is brunch the best meal ever? Savory, sweet, carb-full or carb-less, meat-filled or meat-less, brunch is the bomb. The only problem with brunch (not like it’s a real problem) is that I can never decide between sweet or savory. Sometimes I wish brunch could be a real thing, with starters, mains and desserts. Now that would be Brunch. And for starters, I’d choose this Crispy Salt and Pepper French Toast.
Before this, I never tried savory French toast, but when I saw this recipe on Food52, I had to give it a try. Green onions, cilantro and sriracha? It sounded like the perfect wake-me-up and it was. I’ve made it two times already – it’s the perfect midnight snack. I’m pretty jet-lagged but having a ton of fun enjoying massive night time marathon sessions of House of Cards. I’m so happy to be home/in the land of Netflix! And I’m super excited to have an oven and four burners again!
Crispy Salt and Pepper French Toast Recipe via Food52
serves 1-2
- 1 egg
- 1 tablespoon milk
- sprinkle of salt
- 1/4 teaspoon black pepper
- 1 tablespoon green onions
- 1 tablespoon cilantro
- 2 slices thick bread, preferably day-old or stale
- butter or oil for the pan
- sriracha to taste
In a shallow bowl, beat together the egg, milk, salt, pepper, green onions and cilantro. Dip slices of bread into egg mix allowing the bread to soak up the eggy goodness. Melt a pat of butter or a touch of oil in a large skillet over medium-high heat. Add the soaked slices of bread and fry, flipping once, 2-3 minutes per side or until deeply golden brown and crispy. Enjoy warm with sriracha to taste.
